                                                       PİROSHKİ

Piroshki is a russian food. It is a cool dough with potato filled. Is easy to cook it.
Here’s how to make piroshki:
  1. Make the Dough:  Piroshki can be made with either a baking powder or yeast dough.  The dough recipe that we use is egg rich and good enough to rival yeast doughs.
  2. Cook the Filling:  The filling can be made with meat and cheese, vegetables, or even scrambled eggs.  Let your imagination be your guide.
  3. Assemble and Bake:  Roll the dough, cut into 6-inch circles, add filling, fold the dough over and seal the edges, and bake.
They are very simple to make.  As we experimented with different fillings and recipes, we learned some lessons:
  • Cheese will leak out if the dough is not carefully sealed.  Dampen the edges of the circle with a pastry brush and water before sealing.  (We didn’t find that necessary with the other recipes.)  Reduce the baking time by five minutes.
  • The dough will absorb some liquid from the filling.  Add an extra half-cup of water to the filling for moister piroshki.
  • New, waxy potatoes work well in piroshki.  Russet potatoes are too starchy to match up with the starch in the crust.

                                                      BULGARIAN BANİTSA

n a large greased baking dish, individual sheets are layered one by one with small amounts of filling and canola oil between them. After half of the sheets are placed in the pan, a large portion of the filling is spooned onto the leaves and is then covered with the remaining sheets and filling in the same manner. The pastry is then baked at 200–250 °C. In some recipes, just before the banitsa is finished, a glass of lemonade or sparkling water is poured into the tray, and the baking continues for several more minutes.
An alternative method of preparation is taking each sheet of dough, laying it out flat and sprinkling some of the filling on it. Then, the sheet is rolled up into a tight roll with the filling on the inside of the roll. The long roll is then taken and rolled up in a circle. This first sheet of dough is then placed in the baking pan. The process is repeated with the remaining sheets of dough and each consecutive roll is placed around the first one in the pan. The resulting shape resembles a spiral (see photo). The banitsa is then sprinkled with canola oil and baked.
